Yo Ho Ho and a Shot of Rum Balls
In celebration of International Talk Like a Pirate Day, I am sharing my recipe for Chocolate Rum Balls. Or should I say, Arrgh! Here be me recipe for Chocolate Rum Balls?
I’m not sure if these are cookies or candy but I do know that they are simple to make and don’t require any cooking. Rum balls actually taste better a day or two after they’re made, a perfect treat for Pirate Day office parties. It’s ok for pirates to drink on the job but never steer the ship under the influence of alcohol (grog) laced cookies.
Chocolate Rum Balls
Makes approximately 3 dozen
4 tablespoons unsalted butter melted
2/3 cup sweetened condensed milk
1 tablespoon vanilla extract
¼ cup (2 oz) dark rum
1 ½ cups of crushed chocolate wafer cookies (approx 9oz)
1 ½ cups of crushed vanilla wafer cookies (approx 9oz)
1 cup of crushed pecans (approx 4oz)
Pinch of salt
1 cup powdered sugar for coating
In a large bowl combine melted butter, milk, vanilla and rum.
Stir to combine
Add crushed cookies, pecans and salt
Stir to combine.
Scoop the mixture by the tablespoonful and roll into balls. You may need to squeeze the balls (hee hee) so they are firm and hold together. Roll the balls in powdered sugar to coat.
Store in a sealed container.
